CHEMISTRY IN THE TEA-POT

The English are famous for the amount of tea they drink. "A cup of tea" is certainly one of the most commonly heard phrases in Britain. But really the English know how to make tea and what it does for you. Seven cups of it will wake you up in the morning. Nine cups put you to sleep at night. When you are hot, tea cools you, and when you are cold, it warms you up. When you drink it in the middle of the morning, it stimulates you for further work. When you drink it in the afternoon, it will relax you for further thought. People in England like to tell jokes about tea. Here is one of them.

The test of a good tea is simple. When a spoon stands up in it, then it is strong enough; when the spoon starts to wobble, it is weak.

Most English people drink their tea but do not know what actually happens when they pour water over the tea-leaves. Scientists, of course, have enquiring minds: Dr. Michael Spiro of Imperial College, London, has made a scientific study of what happens when we make a pot of tea.

Three of the substances contained in the tea leaves come out of the leaf into the water. There are theoflavins which give the tea its colour. Theorubigins affect the taste and the caffeine makes tea a stimulant.

Scientific research confirms that if you use water which is near the boiling point, you get the best cup of tea because this temperature brings out more of all those substances from the tea leaves. But however hot the water is, the process always takes a few minutes. Stirring with a spoon will make very little difference, so always leave the tea to stand.

The last point is important. Scientists are trying to find the way of making a faster cup of tea. In these fast-moving times people expect not only instant coffee, but instant tea.
